Holiday Recipe Share: Home Made Cranberry Apple Cornbread Stuffing (GF*)

Early holiday planners will appreciate this gluten free stuffing recipe that can be prepared in advance. With gluten free diets on the rise, this cornbread substitution will prove to be a wonderful solution that won't deprive. If your family is anything like mine they will eat up every last bite - yes we tried it out ourselves during Thanksgiving.

  

We are sure that you have many holiday dinners planned in the coming weeks with friends and loved ones and will need some alternative solutions to dietary preferences... so we wanted to share the healthy, delicious cornbread stuffing with you!

Prepare Bobs* gluten free Cornbread (mixture uses oil and milk) the night before so it is cool by morning. (Please note the mix also calls for eggs - but I was cooking with an egg allergy in mind and skipped the eggs which worked out FINE!) Ingredients:

  • 5 celery stalks
  • 1 large onion
  • Smartbalance oive oil spread
  • cranberries to taste
  • 2 apples
  • pinch of salt and pepper

Directions: in a large frying pan melt two tablespoons of smartbalance butter on medium heat. Dice up celery (including leaves) and onions until they are cooked down. Slice up apples into small pieces and stir in half-cup cranberries. Simmer for 10 - 15 minutes

  Remove from heat and let cool for 15 minutes. Crumble cornbread into large oven-friendly bakeware (Ex. 9" x 13") - add mixture and stir it all up.

Refrigerate in pan until an hour before serve - reheat at 350º for 1 hour.
