A Taste of What's to Come - H.V. Restaurant Week Preview

DOVER PLAINS, New York-- As an unofficial kick-off to this fall's Hudson Valley Restaurant Week, Madava Farms in Dover Plains will host the Crown Maple "Chef's Challenge Showcase" on Sunday, October 14, from 2 to 4 pm. Four prominent regional chefs, winners of the spring Hudson Valley Restaurant Week's "Chef Challenge," will prepare tasting portions of their winning dishes and offer tips and insights into creating their recipes."The Challenge added a new dimension to Restaurant Week for diners and chefs alike," says Janet Crawshaw, Restaurant Week organizer and publisher of The Valley Table magazine.

More than 40 participants entered the Challenge, creating an appetizer, entree, dessert or cocktail with Crown Maple syrup as a key ingredient and featuring it on their Restaurant Week menus in March. Mixologist Justin Montgomery, co-owner of Harpers in Dobbs Ferry, was the winner in the cocktail category with his Crown Maple Mack & Jack.

The drink is a maple variation on a Manhattan, minus the bitters, and is now a mainstay on the bar's cocktail menu. Executive Chef James Kelly (below) of Restaurant X & the Bully Boy Bar in Congers won in the appetizer category with his salad of heirloom beets with housemade-whipped ricotta, Crown Maple, pistachio oil and candied pecans.

Josh Kroner of Terrapin Restaurant in Rhinebeck won in the entree category with Maple brined grilled pork chop with Calvados demi-glace and maple-bacon almonds. It proved to be the most popular dish on Terrapin's Spring Restaurant Week menu.

Executive Chef Pasqual Dedi (below) of Zuppa in Yonkers created the winning dessert, Crown Maple Panacotta flavored with a nip of bourbon, a little thyme and Crown Maple syrup.

Diners will have an opportunity to taste more from each of the winning chefs  during Hudson Valley Restaurant Week Fall which runs for two weeks, November 5-18. Reservations are now open and attendees at the Madava Farms event will be able to make their reservations on site.

During the event, visitors are invited to explore the newly opened 800-acre Madava Farms site featuring casual farm to table dining in The Farm Stand, tours, hiking, tasting, culinary events and other programming experiences.
